About this honey
Litchi honey exists because litchi orchards need pollinators and beekeepers need a spring flow. Hives go into the orchards around Muzaffarpur in the second week of March and come out before the fruit sets.
The window is three weeks. Some years it is two. When a season is short we simply have less of it, and when it is gone the product goes out of stock rather than quietly becoming something else.
It is the honey to give someone who has only ever had the supermarket kind.

Questions
Why does raw honey crystallise?
Crystallisation is a natural property of raw, unheated honey. Glucose separates from water and forms fine crystals. Place the jar in warm water (under 40°C) to reliquefy.
